The works and the days

Today, as in the past, cultivation takes place with natural methods, scrupulously honoring the traditional olive calendar: the periodic chopping of the weeds, the manual cleaning of the pitches, the diligent husking of the suckers, the careful fertilization, the meticulous pruning, the treatment of the cuts, the kaolin powder sprinkled on the foliage to shelter them from the summer heat and to keep harmful insects away. Sometimes the planting of new plants, cared for like babies. But above all the great attention to the harvest: always just in advance, and strictly leaving the first olives fallen due to the wind on the ground; only from the branches, gently shaken and carefully freed from their load of fruit.
