The pressing
Anticipating the harvest means picking the drupes at the peak of their freshness when they are turgid and tense, swollen of their perfumed moods. From this moment the timing is very important: a careful washing and immediate pressing; then the kneading, the filtering and the spectacle of the precious liquid that drips. A few hours passed from the branch to the bottle, the transformation took place cold, inside a sealed circuit, and every aroma was captured. Everything will be returned to the table, intact and rich. Passed through the stove, to embellish a recipe; straight on the plate, raw and alive, to release all its fragrances. By the way... the oil, for pleasure.
